Ingredients
- 1 cup natural peanut butter (sugar-free)
- 1/2 cup coconut oil, melted
- 1/4 cup unsweetened cocoa powder
- 2-3 tablespoons powdered erythritol (adjust to taste)
- 1 teaspoon pure vanilla extract
- A pinch of salt
Instructions
- 1. In a microwave-safe bowl, melt the coconut oil in 20-30 second intervals until it becomes a liquid.
- 2. In a separate mixing bowl, combine the melted coconut oil, natural peanut butter, unsweetened cocoa powder, powdered erythritol (adjust to taste), pure vanilla extract, and a pinch of salt. Mix until all the ingredients are well combined and the mixture is smooth.
- 3. Line an 8x8-inch (20x20 cm) square baking dish with parchment paper, leaving some overhang on the sides for easy removal.
- 4. Pour the peanut butter and chocolate mixture into the prepared baking dish. Use a spatula to spread it out evenly.
- 5. Place the baking dish in the refrigerator and chill for at least 1-2 hours, or until the mixture has solidified.
- 6. Once the bars have set, use the parchment paper overhang to lift them out of the dish. Place them on a cutting board and cut into 12 even bars.
- 7. Store the Keto Peanut Butter Chocolate Bars in an airtight container in the refrigerator to keep them firm. You can also freeze them for longer storage.
