- 1/2 cup coconut oil, melted
- 4 oz cream cheese (full-fat), softened
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 1-2 teaspoons powdered erythritol or your preferred keto-friendly sweetener (adjust to taste)
- 1/2 teaspoon vanilla extract
- 1 teaspoon poppy seeds
Instructions
- 1. In a mixing bowl, combine the melted coconut oil and softened cream cheese. Mix until they are well incorporated.
- 2. Add freshly squeezed lemon juice, lemon zest, powdered erythritol (adjust to your desired sweetness), vanilla extract, and poppy seeds to the bowl. Mix until all the ingredients are fully combined, and the mixture is smooth.
