- 1/2 cup sugar-free dark chocolate chips or chunks
- 1 tablespoon coconut oil
- Fresh strawberries, washed and dried
- Keto-friendly sweetener (such as powdered erythritol or stevia), to taste (optional)
- Unsweetened cocoa powder for dusting (optional)
Instructions
- 1.Prepare a baking sheet or tray lined with parchment paper.
- 2.In a microwave-safe bowl, combine the sugar-free dark chocolate chips or chunks with the coconut oil.
- 3.Microwave in 20-second intervals, stirring in between, until the chocolate is completely melted and smooth. Be careful not to overheat.
- 4.If you prefer a sweeter chocolate coating, you can add a keto-friendly sweetener to the melted chocolate, to taste. Mix well to combine.
- 5.Hold a washed and dried strawberry by its green stem and dip it into the melted chocolate mixture, coating it evenly. You can use a spoon to help spread the chocolate over the strawberry.
- 6.Allow any excess chocolate to drip off, and then place the chocolate-covered strawberry onto the prepared parchment-lined baking sheet.
- 7.Repeat this process with the remaining strawberries.
- 8.If desired, you can dust the chocolate-covered strawberries with unsweetened cocoa powder for added flavour and presentation.
- 9.Place the baking sheet with the chocolate-covered strawberries in the refrigerator for about 10-15 minutes to allow the chocolate to set.
- 10.Once the chocolate has hardened, your Keto Chocolate Covered Strawberries are ready to enjoy!
