  • 1/2 cup sugar-free dark chocolate chips or chunks
  • 1 tablespoon coconut oil
  • Fresh strawberries, washed and dried
  • Keto-friendly sweetener (such as powdered erythritol or stevia), to taste (optional)
  • Unsweetened cocoa powder for dusting (optional)

Instructions

  • 1.Prepare a baking sheet or tray lined with parchment paper.
  • 2.In a microwave-safe bowl, combine the sugar-free dark chocolate chips or chunks with the coconut oil.
  • 3.Microwave in 20-second intervals, stirring in between, until the chocolate is completely melted and smooth. Be careful not to overheat.
  • 4.If you prefer a sweeter chocolate coating, you can add a keto-friendly sweetener to the melted chocolate, to taste. Mix well to combine.
  • 5.Hold a washed and dried strawberry by its green stem and dip it into the melted chocolate mixture, coating it evenly. You can use a spoon to help spread the chocolate over the strawberry.
  • 6.Allow any excess chocolate to drip off, and then place the chocolate-covered strawberry onto the prepared parchment-lined baking sheet.
  • 7.Repeat this process with the remaining strawberries.
  • 8.If desired, you can dust the chocolate-covered strawberries with unsweetened cocoa powder for added flavour and presentation.
  • 9.Place the baking sheet with the chocolate-covered strawberries in the refrigerator for about 10-15 minutes to allow the chocolate to set.
  • 10.Once the chocolate has hardened, your Keto Chocolate Covered Strawberries are ready to enjoy!
