  • 2 cups fresh broccoli florets
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste

Instructions

  • 1. In a pot, melt the butter over medium heat. Add the diced onions and minced garlic. Sauté for 2-3 minutes until onions are translucent.
  • 2. Add the fresh broccoli florets to the pot and sauté for another 2-3 minutes.
  • 3. Pour in the chicken broth and bring the mixture to a simmer. Let it cook for 10-15 minutes or until the broccoli is tender.
  • 4. Use an immersion blender or transfer the mixture to a blender (in batches if needed) to puree until smooth.
  • 5. Return the pureed mixture to the pot. Stir in the heavy cream and cook for an additional 5 minutes over low heat.
  • 6. Gradually add the shredded cheddar cheese while stirring until it's fully melted and incorporated into the soup.
  • 7. Season the soup with salt and black pepper to taste.
  • 8. Serve your Keto Broccoli and Cheddar Soup hot, garnished with extra cheese if desired.
