- 2 cups fresh broccoli florets
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Salt and black pepper to taste
Instructions
- 1. In a pot, melt the butter over medium heat. Add the diced onions and minced garlic. Sauté for 2-3 minutes until onions are translucent.
- 2. Add the fresh broccoli florets to the pot and sauté for another 2-3 minutes.
- 3. Pour in the chicken broth and bring the mixture to a simmer. Let it cook for 10-15 minutes or until the broccoli is tender.
- 4. Use an immersion blender or transfer the mixture to a blender (in batches if needed) to puree until smooth.
- 5. Return the pureed mixture to the pot. Stir in the heavy cream and cook for an additional 5 minutes over low heat.
- 6. Gradually add the shredded cheddar cheese while stirring until it's fully melted and incorporated into the soup.
- 7. Season the soup with salt and black pepper to taste.
- 8. Serve your Keto Broccoli and Cheddar Soup hot, garnished with extra cheese if desired.
