- 2 medium zucchinis, spiralized into zoodles
- 4 slices of cooked bacon, crumbled
- 1 ripe avocado, peeled and pitted
- 1/4 1/4 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- Salt and black pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- 1. Spiralise the two medium zucchinis into zoodles using a spiralizer. Set them aside.
- 2. In a blender or food processor, combine the ripe avocado, heavy cream, minced garlic, grated Parmesan cheese, and fresh lemon juice. Blend until the mixture is smooth and creamy. You may need to scrape down the sides of the blender or food processor to ensure all ingredients are well combined. Season the creamy avocado sauce with salt and black pepper to taste. Adjust the seasoning according to your preference.
- 3. In a large skillet, heat a small amount of cooking oil over medium-high heat. Add the spiralised zoodles and sauté for about 2-3 minutes until they are just tender. Be careful not to overcook; zoodles should remain slightly crisp.
- 4. Add the crumbled bacon to the sautéed zoodles and stir to combine.
- 5. Pour the creamy avocado sauce over the zoodles and bacon. Toss everything together in the skillet until the zoodles are evenly coated with the sauce and heated through.
