  • For Buffalo Cauliflower Bites:
  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup hot buffalo sauce (sugar-free for keto)
  • 2 tablespoons unsalted butter, melted
  • For Ranch Dip:
  • 1/2 cup sour cream (full-fat)
  • 1/4 cup mayonnaise (keto-friendly)
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  • For Buffalo Cauliflower Bites:
  • 1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.
  • 2. In a large mixing bowl, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix well to create a coating mixture for the cauliflower.
  • 3. Dip each cauliflower floret into the melted unsalted butter, allowing excess butter to drip off.
  • 4. Roll the buttered cauliflower florets in the coating mixture until they are evenly coated. Place them on the prepared baking sheet.
  • 5. Bake in the preheated oven for about 20-25 minutes or until the cauliflower bites are crispy and golden brown.
  • 6. While the cauliflower is baking, prepare the buffalo sauce. In a separate bowl, combine the hot buffalo sauce and any remaining melted butter.
  • 7. Once the cauliflower bites are done baking, remove them from the oven. Drizzle the buffalo sauce mixture over the cauliflower bites, tossing them to coat evenly.
  • For Ranch Dip:
  • 1. In a small bowl, combine the sour cream, mayonnaise, dried parsley, dried dill, garlic powder, onion powder, salt, and black pepper. Mix well until all the ingredients are fully incorporated.
  • 2. Taste the dip and adjust the seasoning according to your preference.
  • 3. Serve the Buffalo Keto Cauliflower Bites hot with the homemade Ranch Dip on the side.
