- For Buffalo Cauliflower Bites:
- 1 medium head of cauliflower, cut into bite-sized florets
- 1/2 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup hot buffalo sauce (sugar-free for keto)
- 2 tablespoons unsalted butter, melted
- For Ranch Dip:
- 1/2 cup sour cream (full-fat)
- 1/4 cup mayonnaise (keto-friendly)
- 1 teaspoon dried parsley
- 1/2 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/2teaspoon onion powder
- Salt and black pepper to taste
Instructions
- For Buffalo Cauliflower Bites:
- 1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.
- 2. In a large mixing bowl, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix well to create a coating mixture for the cauliflower.
- 3. Dip each cauliflower floret into the melted unsalted butter, allowing excess butter to drip off.
- 4. Roll the buttered cauliflower florets in the coating mixture until they are evenly coated. Place them on the prepared baking sheet.
- 5. Bake in the preheated oven for about 20-25 minutes or until the cauliflower bites are crispy and golden brown.
- 6. While the cauliflower is baking, prepare the buffalo sauce. In a separate bowl, combine the hot buffalo sauce and any remaining melted butter.
- 7. Once the cauliflower bites are done baking, remove them from the oven. Drizzle the buffalo sauce mixture over the cauliflower bites, tossing them to coat evenly.
- For Ranch Dip:
- 1. In a small bowl, combine the sour cream, mayonnaise, dried parsley, dried dill, garlic powder, onion powder, salt, and black pepper. Mix well until all the ingredients are fully incorporated.
- 2. Taste the dip and adjust the seasoning according to your preference.
