In a small bowl, mix together the soy sauce, sesame oil, and grated fresh ginger to create the stir-fry sauce. Set it aside.
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the sliced chicken to the skillet and stir-fry for approximately 5-7 minutes until it's cooked through and no longer pink. Remove the cooked chicken from the skillet and set it aside.
In the same skillet, add the asparagus and red bell pepper. Stir-fry for about 5-6 minutes until the vegetables are tender yet still crisp.
Return the cooked chicken to the skillet with the vegetables.
Pour the stir-fry sauce over the chicken and vegetables. Stir well to coat everything evenly. If desired, add red pepper flakes for extra heat.
Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients.
Season with salt and black pepper to taste.
Garnish your Keto Chicken and Asparagus Stir-Fry with chopped green onions.
Serve hot as a delicious and keto-friendly dinner.
