2 large zucchinis
2 ripe avocados
4 slices cooked bacon, crumbled
40g diced red onion
45g diced tomatoes
25g shredded cheddar cheese
1tbsp chopped fresh cilantro (optional)
Salt and black pepper to taste
Lime wedges for serving (optional)

Recipe

    Preheat your oven to 375°F (190°C).

    Cut the zucchinis in half lengthwise, and scoop out the seeds and some of the flesh to create boat-like structures. Place them on a baking sheet.

    In a bowl, mash the ripe avocados until they are smooth. Season with salt and black pepper to taste.

    Spread the mashed avocado evenly into the hollowed-out zucchini boats.
