1lb fresh asparagus, trimmed and chopped
1 small onion, chopped
2 cloves garlic, minced
2tbsp butter
950ml chicken or vegetable broth
250ml heavy cream
25g grated Parmesan cheese
Salt and black pepper to taste
Chopped fresh chives for garnish (optional)

Recipe

    In a large pot or saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

    Add the chopped asparagus to the pot and continue to sauté for an additional 5 minutes, stirring occasionally.

    Pour in the chicken or vegetable broth and bring the mixture to a simmer. Allow it to simmer for about 15-20 minutes or until the asparagus is tender.

    Use an immersion blender or transfer the soup to a regular blender (in batches if needed) and blend until smooth.

    Return the blended soup to the pot and place it over low heat.
