Preheat your oven to 375°F (190°C). Grease a baking dish and set it aside.
Cut the large head of cauliflower into florets.
Cook the bacon slices until they are crispy. Once cooked, crumble the bacon into small pieces.
In the prepared baking dish, layer the cauliflower florets. Sprinkle the crumbled bacon over the cauliflower.
In a saucepan, combine the heavy cream, chicken broth, minced garlic, dried thyme, salt, and black pepper. Heat the mixture over medium heat, stirring constantly, until it begins to simmer. /span>
Remove the saucepan from heat and stir in the shredded cheddar cheese and grated Parmesan cheese. Mix until the cheeses are melted and the sauce is smooth.
Pour the cheese sauce evenly over the cauliflower and bacon in the baking dish.
