2 large eggs
2 low-carb tortillas (6-8 inches in diameter)
4oz cooked breakfast sausage (sugar-free)
25g shredded cheddar cheese
2tbsp diced bell peppers (any color)
2tbsp diced onions
2tbsp diced tomatoes
2tbsp sour cream (optional)
Salt and black pepper to taste
Cooking oil or butter for cooking eggs

Recipe

    In a skillet, heat a small amount of cooking oil or butter over medium heat. Crack the eggs into the skillet and cook them to your preferred doneness, whether it's sunny-side-up, scrambled, or over-easy. Season with salt and black pepper. Remove from heat.

    Heat the low-carb tortillas in a dry skillet for about 10-15 seconds on each side to make them pliable.

    Lay one warm tortilla flat. Place half of the cooked breakfast sausage on one side of the tortilla. Add half of the cooked eggs on top of the sausage. Sprinkle with diced bell peppers, onions, and tomatoes. Finally, sprinkle half of the shredded cheddar cheese over the top.

    Fold the sides of the tortilla in and then roll it up tightly from the bottom, creating a burrito.

    Repeat the assembly process for the second burrito using the remaining ingredients.
