2 medium zucchinis, spiralized into noodles
1 large chicken breast, cooked and shredded
30g diced red bell pepper
30g diced cucumber
40g cherry tomatoes, halved
2tbsp olive oil
1tbsp lemon juice
1 garlic clove, minced
1tbsp chopped fresh basil or parsley
2tbsp grated Parmesan cheese (optional)
Salt and black pepper to taste
