Ingredients

Servings:
1
Units:
40g chia seeds
250ml unsweetened almond milk or coconut milk
60ml full-fat Greek yogurt
1tbsp low-carb sweetener (such as erythritol or stevia)
1/2tsp vanilla extract
35g fresh mixed berries (strawberries, blueberries, raspberries)
A pinch of salt
Fresh mint leaves for garnish (optional)

Recipe

  1. 1

In a mixing bowl, combine the chia seeds, unsweetened almond milk or coconut milk, full-fat Greek yogurt, low-carb sweetener, vanilla extract, and a pinch of salt. Stir well until all ingredients are thoroughly combined.

  2. 2

Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency.

  3. 3

Before serving, give the Keto Chia Seed Pudding a good stir to ensure an even texture.

  4. 4

Top the pudding with fresh mixed berries just before serving. You can also add a few fresh mint leaves for garnish.

  5. 5

Enjoy your Keto Chia Seed Pudding with Berries as a satisfying and low-carb breakfast, snack, or dessert.
